Most classes are held at the Dragonfly Shops and Gardens at 260 N. Glassell St in Orange. Class fees may be paid in cash at the time of the class or in advance at the Dragonfly.

Mozzarella in Under an Hour
Discover how quick and inexpensive it is to make soft cheese at home! In this workshop, you will learn the general principles of cheesemaking and how to apply them to a quick mozzarella that is delicious and costs only the price of a gallon of milk, with minimal equipment required. The class includes a recipe to take home and sampling of the mozzarella.
Goat Cheeses
Heather Westenhofer will lead you in techniques for making two goat’s milk cheeses: both a simple chevre as well as feta for the more advanced cheesemaker. Past classes have also included artisanal goat cheese samples and wine pairings.
Delicious Homemade Treats
This workshop will cover two different, totally homemade cheese projects you can produce with inexpensive, readily available items to treat your family and friends. Learn to make your own butter (no churn involved) and flavor it with herbs. Create a tasty goat milk chevre and marinate it in garlic-infused olive oil. You will be the life of the potluck when you say that you made your cheese from scratch, and everyone loves a cheese-y gift!
Mold-Ripened Cheeses
Are you ready to take your cheesemaking skills to the next level? In this class, you will explore techniques for making delicious mold-ripened cheese at home. Learn general cheesemaking principles and how to turn milk into a camembert-style cheese in only a few short weeks, while enjoying a tasting of artisanal mold-ripened cheeses with wine pairings.
